It developed as a way to preserve and use up small pieces of pork or liver without wasting anything. In the past, laborers and farmers would break open large loaves of bread, fill them with pâté, cheese, or terrine, and eat them on the spot. This is the origin of the modern "cassecroute" (sandwich).

The technique of smoking salmon itself has a long history, developed in Nordic countries such as Norway, Scotland, and Russia, as a way to preserve fish for extended periods. In the 19th century, Scandinavian fishermen established a method of preserving salmon by brining it, which became popular among Jewish people. One theory suggests that Jewish people who could not eat the popular "Eggs Benedict" (which uses ham) in New York substituted salmon for the ham and cream cheese for the hollandaise sauce, and put it in a bagel, which is how it all began.

It is said to have been invented by the chef Iskender Efendi. Until then, kebabs were grilled horizontally (on skewers), and the fat dripped onto the fire, creating smoke. By grilling it vertically, the fat dripped down the entire piece of meat, coating it as it was cooked.
